Braised Lamb Shanks with Fresh Herbs

  • Ingredients:
  • 6 1 ¼ pound Lamb shanks
  • For the rub:
  • 3 teaspoons salt
  • 2 teaspoons freshly ground pepper
  • 3 teaspoons finely chopped fresh rosemary leaves
  • 3 teaspoons finely chopped fresh thyme leaves
  • 1½ teaspoons dried fennel seeds
  • For the braising sauce:
  • 3 Tablespoons olive oil
  • 3 Vidalia onions, chopped (about 4 ½ cups)
  • 6 cloves garlic, chopped
  • 3-4 ounces pancetta, diced
  • 2 bay leaves
  • 2 teaspoons fresh thyme leaves, chopped
  • 2 cups dry white wine
  • 1 ½ cups chicken broth
  • One-28 ounce can of diced tomatoes plus 1 -15oz can
  • For the garnish:
  • 1½ Tablespoons finely chopped fresh parsley
  • 1½ Tablespoons finely chopped fresh rosemary
