Cornflake Chicken

"I love recipes that are variable and this is just such a one. If you take the basic idea of dipping chicken and then coating it, you can find TONS of ways to make this dish new. And don't even get me started on fillings. Pound the chicken to 1/4 inch thick, put something on top and roll it up. Fasten with a toothpick and then dip and coat. I am sure I will post some of my favorites as time goes on." - FrugalAntics
