  • 24 (1 kg) Small Mixed Color Potatoes, scrubbed 

  • ¼ Cup Olive Oil
  • 1 Tbsp Chopped Rosemary
  • 1 ½ Tbsp Lemon Juice, or to taste
  • Sea Salt

  • Freshly Ground Black Pepper

    • I made this today with potatoes that weren't consistent sizes, so stacking them was difficult. We ended up cooking it for 70 minutes and it could have gone a little longer to get it to look as crispy as the photos from Sea Salt with Food. It was good but I would like to try it again, chopping the rosemary finer and find more consistent sized potatoes.
