- 3 cups Chicken Stock
- 3 tbsp olive oil (you know... the best you can get).
- 1 onion, finely diced.
- 2 celery stalks, finely diced.
- 1 cup arborio rice
- 1/2 cup white wine
- 1 tsp ground coriander
- 4 cups chopped mushrooms
- 2 tbsp mascarpone
- 1 tbsp chopped chives
- In a deep sauté pan heat half of the olive oil at med high.
- Salt and Pepper to taste.
