  • This one is has a creamy texture thanks to the addition of mascarpone right at the end.
  • 3 cups Chicken Stock
  • 3 tbsp olive oil (you know... the best you can get).
  • 1 onion, finely diced.
  • 2 celery stalks, finely diced.
  • 1 cup arborio rice
  • 1/2 cup white wine
  • 1 tsp ground coriander
  • 4 cups chopped mushrooms
  • 2 tbsp mascarpone
  • 1 tbsp chopped chives
  • In a deep sautÉ pan heat half of the olive oil at med high.
  • Salt and Pepper to taste.
