Ingredients

4 lemons zest from all and 8 tablespoons of juice
6 tablespoons extra virgin olive oil*
salt and pepper to taste*
4 ripe avocados, sliced
1 large red onion, cut crosswise into very thin slices (should be about 1 1/2 cups)
8 oz feta, crumbled
1/3 cup chopped cilantro

Attachments

I cooked this over the weekend & served with a whole-wheat quesadilla. The salad definitely classed up the meal!

Next time: less lemon juice, more cilantro. might also try with shallots instead of red onions
