Spicy Arugula, Goat Cheese & Plum Salad

- 1 large package of Arugula
- 1 medium package of Goat Cheese
- 3 Black Plums, Sliced (soak in 1/2 cup of sugar in refrigerator for 3 hours, if desired)
- 1 cup Walnuts
- 1/3 cup Extra Virgin Olive Oil
- 1/3 cup Balsamic Vinegar
- 1 Tbsp Dijon Mustard
- 1 Tsp Fresh Ground Pepper (I prefer to use Jane’s Krazy Mixed-Up Pepper)
Wash & dry the arugula, put it in a serving bowl. Add sliced plums to the top of the arugula. Crush up the walnuts in a zip-top bag & add them to the bowl. Break up the goat cheese, and add to the top of the salad.
Mix the oil, vinegar, pepper & mustard together & beat with a fork until emulsified. Add to the salad right before serving.
