4 pounds red-skinned potatoes
8 slices thick-cut bacon
1/4 cup butter
1 small onion, chopped
1/2 teaspoon freshly ground black pepper

Ok I think we're getting there. This time we used Harpoon IPA (instead of winter warmer) and also drained half of the bacon fat. (also cooked at a higher temp). The potatoes were crispy on the outside and the flavor wasn't impacted!

Wow. Talk about mixing your vices together! Beer / Butter / Bacon... SO GOOD. Could have used less bacon fat. The potatoes ran a bit soggy. Also curious to try with a different beer (used Harpoon Winter Warmer)
