Spicy Carrot Soup with Cilantro-Lime Puree « Appoggiatura

  • 1 T peanut oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 C water
  • 1 1/2 lbs carrots
  • 1 1/2 tsp kosher salt
  • 1/2 tsp crushed red pepper
  • juice and zest of 1 lime
  • 1 tsp sesame oil
  • 1 tsp
  • 1 1/2 C cilantro leaves, washed and packed
  • 2 T peanut or other neutral tasting oil
  • pinch of salt
