Tomato-Basil Pasta

- 1 pound uncooked pasta
- 2 cloves garlic
- 1 pound tomatoes (about 5)
- 1 (2/3 ounce) package fresh basil
- 8 ounces fresh mozzarella (or 2 cups shredded)
- 2 TBs olive oil
- Salt and Pepper
- Bring a large saucepan of water to a boil and add pasta.
- Cook over medium-high heat stirring occasionally, for 10-ish minutes. Drain the pasta and keep warm.
- Meanwhile, peel garlic and finely chop. Chop tomatoes, basil, and break up mozzarella.
- Heat olive oil in large saute pan and add the tomatoes and garlic.
- Cook, stirring frequently for 5 minutes or until tomatoes are warmed through. Add basil and stir.
- Remove from heat and stir in the hot pasta. Season with salt and pepper, stir in the cheese, serve immediately
