Thyme Smashed Potatoes

Honestly I'd be happy to have a big bowl of these potatoes and nothing else for dinner. In actuality, I like to serve them with something simple like a roasted chicken or turkey. - 1 1/2-2 lbs baby or fingerling potatoes (I used a mix of blue, red and white)
- 2 1/3 cups of chicken stock
- 1 onion, sliced
- 4 cloves garlic, sliced
- 3 tablespoons fresh thyme leaves
- 1 tablespoon olive oil
- 1 tablespoon butter
- salt
- pepper
