Apple, goat cheese & greens salad

- Mixed greens
- 2 Golden Delicious apples, cut in bite-size pieces
- 1/2 lemon
- 5-6 oz goat cheese
- 1 cup roasted & spiced almonds
- 1/3 cup extra virgin olive oil
- 1/3 cup balsamic vinegar
- 2 tbsp brown sugar
- 1 tsp Jane’s Krazy Mixed-Up Pepper
Soak apples in juice from half a lemon. Wash & dry mixed greens. Crush almonds by sealing in a zip-top bag & rolling a can over them. Add apples to salad, leaving behind lemon juice. Add almonds. Break up goat cheese with your hands & add to top of salad. Refrigerate until serving.
Mix the vinegar, oil, pepper & brown sugar together & beat with a fork until emulsified. Add to the salad right before serving.
