Easy and Light Turkey and Rice

- 1 lb turkey breast cut into strips and then large dices
- 1 large red bell pepper cut into 1 inch pieces
- 2 green Italian frying peppers, cut into 1 inch pieces [See image]
- 1 leek, washed and chopped finely
- 1 medium onion, chopped
- 1 clove garlic thinly sliced
- 1/2 cup or more of white wine
- 1 small 10 oz tin of corn niblets
- 2 cups cooked rice
- fresh Italian flatleaf parsley - chopped
- fresh ground black pepper and salt
- Put turkey pieces in frying pan without oil. Gently cook turning constantly until pieces have turned white. (Oil can be used, but is not necessary.)
- Add chopped leek, garlic, onion. Mix well, then add chopped peppers. Stir and turn. Add wine. [See Image]
- Simmer on low heat while stirring until meat and veggies are cooked. Add ground black pepper and salt.
- Add drained corn niblets and cooked rice. Heat through. Mix in chopped parsley and serve warm or cool. [See Image]
