Curried Celeriac Soup

Soup
  • 4 tablespoons butter
  • 1 small onion, chopped
  • 1 tablespoon minced garlic
  • 1 tablespoon curry powder
  • 1-2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 1/2 pounds celery root, peeled and cut into 1-inch chunks
  • 6 cups chicken or vegetable stock
  • 1 cup milk, half and half, or cream, or to taste
  • 1/4 cup cilantro or parsley for garnish

    • This is a great, but very thin soup. And right at the edge of what I can handle in regard to spicyness.
      I suggest either adding potatoes or rice to thicken it.
