Whole wheat currant bread (Black & Decker Bread Machine)

2lb loaf
  • 1 1/4 cups water (80-90 F/26-32 C)
  • 2 1/2 tablespoons unsalted butter or margarine, cut into pieces
  • 2 tablespoons honey
  • 2 teaspoons grated orange peel
  • 1 1/4 teaspoon salt
  • 1 1/2 cups whole wheat flour
  • 2 1/2 cups bread flour (or Canadian AP flour)
  • 3 teaspoons active dry or bread machine rise yeast
  • 2 teaspoons vital wheat gluten (optional)
1. Measure ingredients into the bread pan in the order listed
2. Insert bread pan security into the unit; close the lid. Plug the unit into the wall outlet.
3. Select the Whole Grain setting and appropriate loaf size (2 lb) and color.
4. Press the Start button.
5. The Complete Signal will sound when the bread is done.
6. Using pot holders, remove the bread pan from the unit and carefully remove the bread from the pan. Note that the kneading paddle may remain in the bread. Remove the paddle when the bread has cooled.
7. Allow the bread to cool on a wire rack until ready to serve (at least 20 minutes).
