Mexi-licious Egg Scramble

  • 2 tbsp water ($0.00)
  • 2 tsp olive or canola oil ($0.00 - stockpiled from 5/2009)
  • 1/2 cup egg subsitute ($0.60 - on sale $2.40)
  • 1/4 cup MorningStar Farms Meal Starters breakfast crumbles ($x.xx - $3.34/bag)
  • 1 tsp Taco seasoning ($0.00 - stockpiled from 5/2009)
  • 1/4 cup shredded low or non-fat cheddar cheese ($0.13 - $1.00 for 2-cup bag at DEAL$)
  • Salsa to taste ($0.00 - stockpiled)
  • Total cost per serving:
Coat the inside of a pyrex or other microwavable 1 qt bowl with 2 tsp olive or canola oil
Add 2 tbsp water, 1/2 cup egg substitute and 1 tsp taco seasoning and stir until mixed
Put 1/4 cup breakfast scrambles in microwave, heat for 30 seconds and remove
Put container with egg mixture in microwave and heat on HIGH 1 min, then take out and stir
Put container with egg mixter back in the microwave, heat on HIGH 30 seconds, take out and stir in breakfast scrambles
Put container with egg mixter back in the microwave, heat on HIGH 30 seconds or until almost done. (You'll need to keep an eye on it at this point to make sure it's not over-cooked.)
Once the eggs are almost done, put them on/in a microwaveable plate or salad bowl, and top with shredded cheese.
Nuke on high for another 15-30 seconds, until cheese melts.
Remove from microwave and top with salsa to tase.
