Stovetop Broccoli mac and cheese (and chicken)

  • 12 oz whole-wheat pasta
  • 4 cups broccoli florets
  • 1 container (8 oz) creme
  • frai`che
  • 1/2 tsp hot sauce
  • 21/2 cups shredded sharp
  • Cheddar
  • 1/2 tsp each garlic powder
  • and ground ginger
  • Ground black pepper,
  • to taste
  • 3 boneless chicken breasts
1. Bring a large pot of salted
water to a boil.
-In seperate pan cook chicken with garlic clove, onion powder, garlic salt, and pepper until no pink.
2. Add the pasta and cook
for 7 minutes. After that,
add the broccoli and cook
for another 2 minutes, or
until the pasta is tender.
Drain the pasta and broccoli
then set it aside.
3. l\/leanwhile, in a 2-qt
saucepan over medium
heat, whisk the creme
fraiche and hot sauce until
simmering, about 2 minutes.
4. Add the Cheddar, garlic
powder and ginger, then
stir over low heat just until
melted. Season with pepper.
5. Ladle into serving bowls,
then top with cheese sauce.

this, and it only gets better.
Add cooked sausage, top it
with browned ground beef
or bacon, or mix in cooked
shrimp, crabmeat or lobster.
To cut the fat, substitute low-
or no-fat Greek-style yogurt
for the creme fraiche. wd
