Cucumber, carrot & broccoli slaw

  • 2 medium cucumbers, peeled
  • 1 small head of broccoli, washed
  • 3 medium carrots, washed & peeled
  • 1 tbsp poppy seeds
  • 3 tbsp Hellmann's mayonnaise
  • 1/3 cup Nakano seasoned rice vinegar
Use vegetable peeler or grater to grate carrots and cucumbers. Cut just the small florets of the broccoli. Mix all vegetables. Add mayonnaise, vinegar & poppy seed. Stir well. Cover & refrigerate 2-3 hours before serving.
