- 5-6 lb boneless pork shoulder roast*
- 2 large onions, sliced
- 2 apples, cored and cut into wedges
- 1-2 lbs Russet potatoes, quartered
- olive oil
- the marinade:
- 1/2 cup dark brown sugar
- 3 tablespoons Worcestershire sauce
- 2 tablespoon bourbon
- 1 1/2 tablespoons balsamic vinegar
- 1 tablespoon mesquite liquid smoke
- 1 teaspoon hot chile powder
- 1 teaspoon hot paprika
- 1 teaspoon chipotle chili powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon ground jalapeno
- for the roasting liquid:
- 1/4 cup bourbon
- 1/4 cup balsamic vinegar
- 1/2 cup water
