  • 1 tsp butter
  • 1 medium red onion, chopped
  • 3 garlic cloves, minced
  • 1 tsp fresh ginger, minced
  • 1/2 jalapeño, minced (fresh or canned)
  • 1 tsp yellow curry powder
  • 1/2 tsp cumin
  • 1 large red tomato, chopped
  • 1/2 c Lite Coconut Milk (can substitute with vegetable broth)
  • 1/4 c Vegetable Broth
  • 1 15 oz can chickpeas, drained and rinsed
  • 1 tsp sea salt
  • 1/8 tsp freshly ground pepper
  • 1/8 tsp garam masala
  • 1/4 tsp paprika
  • 2 Tbsp fresh cilantro, chopped
